Scientists Use Lasers to Cook 3D-Printed Chicken, Keeping It Juicier Than Oven Cooking

Imagine a machine that prints your food layer by layer and cooks it using lasers with millimetre-level precision. Scientists led by Jonathan David Blutinger have explored this futuristic technology, combining 3D food printing with software-controlled laser cooking.

The researchers used chicken to test three types of lasers: blue, near-infrared and mid-infrared. Each laser interacts with food differently, allowing the researchers to control heating, browning and cooking patterns.

One of the most promising findings was that laser-cooked chicken experienced approximately 50 per cent less cooking loss than chicken cooked in a conventional oven. This suggests that the technology could help retain more moisture and produce juicier meat.

The team also demonstrated that near-infrared lasers could brown chicken through suitable plastic packaging, potentially opening new possibilities for packaged food preparation.

With a reported cooking resolution of around one millimetre, the technology could eventually allow users to customise browning patterns and cooking levels across different sections of a meal.

However, challenges remain, including cooking thicker foods evenly, ensuring food safety and reducing preparation time.

Although commercial laser-equipped food printers are not yet widely available, this research offers an exciting glimpse into the future of personalised cooking, where meals could be digitally designed, printed and cooked with unprecedented precision.
